Italian Sausage Soup With Potatoes

On a cold winter day, raining or snowing, soup is the best! This recipe for Italian Sausage Potato Soup is very quick and easy to put together. It can go in the crock-pot for the day, or it can be cooked stove-top. Either way, it comes out perfect every time.

Let’s Talk Italian Sausage

Ok, It may not be a big deal, but the flavor of the Italian sausage is very important to me. I usually use the Johnsonville brand, if I don’t have that, Kroger is pretty good. I have even used the links before. You can put them into the crock-pot whole, and slice them when done, or you can cut the casing off and brown as the recipe calls for.

Potatoes are another important part of this soup. If you have Russets, those work great. My favorite though is the Yukon Gold potatoes. They have a smooth buttery look and feel and work so well to hold up their texture.

Let’s Talk Soup Base

The base of the soup, the broth, is so rich and flavorful. You can’t skip the bay leaf and thyme. They’re what give it such depth of flavor.

Italian Sausage Soup Crock-Pot Version

Gather up all of your Soup ingredients except for the milk. To save time, brown the sausage while peeling and chopping potatoes. Then, move onto the onions and carrots. Everything goes into the crock-pot. Now you can add your chicken broth and herbs and spices. This quick and easy step takes about 10-15 minutes. Turn the crock-pot on low for 8 hours.

To Finish And Thicken The Soup

At the end of the day, take the lid off and add the milk. Now is a good time to thicken your Italian Sausage Potato Soup, if you want. Just add 2-3 Tablespoons of cornstarch or flour to some of the milk and whisk until smooth. add to the soup. Place the lid back on the crock-pot and turn to high and heat until thickened. Season with salt and pepper and serve with salad and bread if desired.

Delicious Cream Based Soup. You can spice it up with pepper flakes, or add sour cream and cheese for a loaded baked potato version.

  • 1 Onion Chopped
  • 2 Celery Stalks Chopped
  • 3 Garlic Cloves Minced
  • 6 Cups Potatoes, Peeled Cubed
  • 1 Lb Italian Sausage Browned
  • 4 Cups Chicken Broth
  • 4 Cups Whole Milk or Half n Half
  • 1/4 Cup Flour


  • 1 Bay Leaf
  • 1/4 tsp Thyme
  • 1/2 tsp Salt
  • 1 tsp Peper


  • 1 Cup Shredded Cheese
  • 1/4 Cup Green Onion
  • 1/2 Cup Sour Cream


  • Place all ingredients except milk and toppings into crock pot. Add Enough Chicken Stock to cover everything. Set to Low for 6-8 hours. At the end of the cooking time, Slowly stir the flour into the milk so its smooth and add to soup. Set to high and bring up to heat so it thickens. Serve with toppings and Bread, Salad or Crackers.
