This recipe is by far the best and easiest meatloaf I’ve ever had. This is the family favorite meatloaf recipe I grew up eating. When I was a kid, I never liked meatloaf though, and would always try and give it to my brother. He absolutely loved it! Every time I make this, the flavor takes me back to when I was little, sitting at a seemingly giant dinner table with my 9 other siblings. Picking through my food waiting for someone to say “If you’re not gonna eat that, I will!” Food didn’t get wasted in that house!
Feeding My Own Family Now
When I had my own children and a husband to cook for, I started trying out meatloaf recipes again. But I couldn’t find one that we all enjoyed. My husband loves everything I make (except for vegetables) so he wasn’t complaining. I, however, wanted to find a recipe that I looked forward to also!
Easy To Prep Makes It My Favorite
- Place all ingredients in Bowl
- Mix with your hands
- Shape into loaf
Since there are no veggies to cut up, its basically a dump and go recipe. Pour All of the Ingredients in, and mix with your hands. Yes, You have to use your hands with meatloaf. I don’t know if there are any other tools better for knowing when to stop mixing. The trick is don’t over mix, and don’t over bake. Shape it into a loaf, (for patties, or meatballs, baking times will differ) and bake it at 350 degrees for 50-60 minutes. Take it out when the juices run clear and the fat is sizzling in the pan. I’ve even put a few pieces of bread under mine to soak up the fat!
What Makes It Our Family Favorite?
I made some tweaks and changes to the old trusty Mom’s Meat Loaf recipe that I grew up eating. I’ve added bacon, I’ve added BBQ sauce, I’ve added fresh veggies here and there! This is by far the best meatloaf you’ll ever eat, it’s flawless every time! The trick? That’s the quick and easy Onion Soup Mix! It gives so much flavor to the beef, and the tomato sauce keeps it moist!
The Egg keeps it all together, and the crackers soak up all the juices and also help to keep it from getting dry too fast. It never fails me, and is always quick to put together, it freezes well and makes great comfort food.
Meat Loaf Is Versatile Too
I would suggest doubling it and putting a meal in the freezer. Or even better add it to your freezer meals when prepping a batch. Just take it out and let it thaw for a day or two in the fridge. This recipe is great for leftovers, you can even put it between 2 slices of bread for an amazing meatloaf sandwich! It also makes great meatballs for spaghetti or meatball sandwich.
Mom’s Meat Loaf
- 1 1/2 Lbs. Ground Beef
- 1/2 Cup Crushed Crackers Ritz/Saltines
- 1 Lg. Egg
- 1/2 14 oz Can Tomato Sauce
- Place all ingredients in a bowl, mix just until incorporated. From here, you can form into the desired size. For one large loaf, bake 50-60 minutes at 350 degrees. for smaller sizes bake until juices are clear. Between 25-35 minutes, depending on sizes. You can also pan fry individual patties.
- Serve with mashed or au-gratin potatoes, and a vegetable
